For windows users I can supply an MS Access file with some sample records for the exercise. Is there something similar I can do for OS Xers that does not require them doing a full install of MySQL? How are the sample apps set up in the default install of 7.0.1? They do have sample apps, right?

For the purpose of this tutorial, a Microsoft Access database file for Microsoft Windows users and a PointBase database file for UNIX users have been provided.

Several default pointbase databases were created by default and have corresponding CF datasources.
You could then either create additional CF datasources pointing to the same PB database and then create your new tables there, or run the PB Console to launch a graphical tool that will help you administer PB. From the graphical PB Console tool you can create new databases, users, and tables.
When I took the Servlet/J2EE course at Sun Microsystems, for some of our labs they had us run the PB Console to get the GUI and create our own databases before beginning the labs.
The JRurn article you cited shows how to run the PBConsole, so perhaps you could have the students create their databases and datasources as part of the exercise.

I`m converting my PHP website to CF website. Now I`m working on my MacOS and then I transfer it to Win. So It should be work on almost platform. - I know that on Win base but...
I found one article, but not easy for me - which one & how to install, how to use, no sample.
